I remembered it from reading your newsletter yesterday. I’m in the middle of moving and found that my husband had already packed the seaweed, so I substituted leaves from frozen Chinese spinach that I had bought fresh. It worked beautifully. My husband tasted a bite of the salad, while I was preparing the rest of the meal, and shook his head, indicating he wasn’t a fan (he has a hard time eating vinegar). But he came back a few minutes later and said he wanted some with his meal. We both loved it! I had added a dash of mirin as well to counteract a bit of the sharpness of the rice vinegar. I think it will be seen frequently at our table this summer.

Your newsletter is a true delight, Nami, and I have saved every issue ever since I started receiving it. Each one is so jam packed with delights. I am looking forward to buying your cookbooks.
