Sorry for the confusion about when to turn off the heat. When you add the roux, you can either turn off the heat or reduce it to very low. In step 11, after the curry has warmed up, the heat should be completely turned off. We hope this helps! 😊

Question about the method though, the steps mention turning off the heat twice, first before the curry roux is added to the stock, and again after the soy sauce is added. When would be the best time to turn the heat off?
